Chicken Parm - No carb version

"I am on a low salt diet like always, but right now I am trying to loose a little weight. So I am on a low carb diet. The only carbs I eat are Fiber related or small amounts of fruit. Tonight I made Chicken Parm with out pasta. Side dish was Fresh green beans and tomatoes from our garden."

Ingredients:
  • Chicken Breast (4) - use a malet to flaten
  • Small amout of flour - Soy flour if you want to go Zero carb
  • 1oz of EVO
  • Organic low salt Tomato sauce version 20mg
  • Organic Low salt tomato paste 20mg salt
  • Garlic 4 - i get the pre-chopped from Trader Joes
  • Basil - Fresh
  • Ground 5 blend Pepper
  • 1 onion
  • fresh mozzarella cheese
  • 1/2 cup of parmesan
Directions:

use 2 pans. split the EVO between the 2 pans. in one pan make the tomato sauce. start by adding the copped onion, a little ground pepper. Let the onion brown a little before you add anything. next add in the chopped garlic, right away add in the tomato sauce and paste. turn down the heat. Add in the basil and anything else you like in your sauce.

other pan get the pan super hot, add in the oil. coat both sides of the chicken with a light covering of flour. Add in the chicken, get light brown on each side. After the chicken is about 90% cooked move to a pan you can put in the oven. After you get all the chicken cooked, scoop some tomato sauce on top of each chicken breast. Put a thin slice of Mozzarella cheese top. dab of parmesan. cook in a 400 deg oven for 20 mins.

Eat with a good veggie on the side.

im sure you do if you are not on a diet like i am.. did you read the first part?

The recipe sounds pretty good, except where's the parmesan????   The only cheese I saw listed was mozzarella.  I think, instead of a light dusting of flour, I'd use bread crumbs and parmesan, mixed about half and half to lightly bread the chicken.  And I'm not sure what EVO is...some kind of oil?

I think I'd have to serve it with some kind of pasta, like neil said, maybe fettuccini alfredo...   But I'm a good 8-10 lbs underweight...and really, really need the calories...

I have no idea whenever I will have still made the Chicken Parmigiano recommended/recognized by the chefs.
