"Sultan says that in the middle east, many poor people eat beans to get a source of protein, since meat is so expensive. I have replaced fava beans, which the recipe originally called for, with garbanzo beans (chickpeas), and butter beans (Lima beans). The traditional way to serve this, is with pita bread, but I also like it on toasted bread and bell pepper. "Be careful! It is very addicting!" ~Veronica"

Ingredients:
  • 2 teaspoons olive oil
  • Medium onion (diced)
  • Medium tomato (diced)
  • 1 tablespoon ground cumin
  • Dash cayenne pepper
  • 2 tablespoons black pepper
  • 3 tablespoons salt
  • Bell pepper (to dip)
  • Pita bread (to dip)
  • Toasted bread (to dip)
  • Parsley (to serve)
  • Lemon juice (to serve)
  • One can Garbanzo beans (chickpeas)
  • One can butter beans (Lima beans)
Directions:

1. Add diced tomato, onion, and olive oil to high walled pitcher-pan.
2. Cook 2 minutes.
3. Add cumin and cayenne pepper.
4. Add garbanzo and butter beans
5. Cook 5 minutes while adding salt and pepper gradually.
6. Stir often.
7. After warm and somewhat gooey, place mix in food processor or blender. Blend until creamy.
8. Serve topped with lemon juice and parsley.
