Delicious Zucchini

"Because cheese makes any vegetable better."

Ingredients:
  • Zucchini
  • Bread crumbs
  • Herbs
  • Ricotta Cheese
  • Parmesan Cheese
  • Mozzarella Cheese
  • Onions (1/2 an onion per 3 zucchini)
  • Garlic
  • Olive Oil
Directions:

1. Cut Zucchini lengthwise and hollow out. Use a spoon and be careful not to take too much out.

2. Sautee 1/2 an onion, garlic, and zucchini innards until they are mushy. Do not carmalize the onion. Add in salt, spices, and herbs.

3. Remove from the heat and mix in the Riccotta and bread crumbs. I used about 1/4 cup each for (3) zucchini. Drop in about a handful of shredded Mozzarella as well to melt.

4. Once the stuffing is to your liking, spoon it back into the hollowed out squash. Put them into a oiled baking pan, sprinkle Parmesan over the lot, and bake on 350/400 for 20-30 minutes.

5. Let cool for a few minutes before eating. Garinsh with a chicken breast and enjoy. Good cold as well.

Ohhhhh that sounds good.  I'll have to remember that when my squash gets going good in the garden.  Bet it would work with yellow squash and scallop squash also.
