
Shrimp Potato

"Combination of potatoes au gratin and shrimp au gratin"
Ingredients:
- 1 medium Russet potato
- 4 oz. shrimp
- 2 T. chopped onion
- 2 T. butter
- 3 oz. shredded cheddar cheese
- 1 oz. Parmesan cheese
- 1/2 t. chopped garlic
- 1 T. olive oil
- salt and pepper
- dash Worcestershire sauce
Directions:
Cook the potato
While the potato is cooking:
- clean shrimp
- cut shrimp into fourths, longways and shortways
- chop onion
- chop garlic
- shred cheese
Just before the potato is ready:
- heat olive oil in a small skillet over medium-high heat
- add garlic
- when the garlic is cooked, add onion and Worcestershire
- after two minutes add shrimp
- when shrimp is just cooked, remove from heat
Turn on oven broiler
Split potato and add butter, salt and pepper
Cover with shrimp mixture
Cover with cheddar cheese
Top with Parmesan
Broil until Parmesan turns brown
Serve
