"Classic Carrot Cake"
Servings: 12
Ingredients:
- 8 oz. (2 sticks) butter, melted
- 2 C. sugar
- 1 T. vanilla
- 1 t. molasses
- 1 t. lemon juice
- 1/2 t. salt
- 4 eggs
- 2 3/4 C. flour
- 1 T. baking powder
- 1 1/2 t. baking soda
- 1/2 t. cinnamon
- 1/2 t. nutmeg
- 1 large carrot, grated
- Optional ingredients: 1 C. walnuts, 1 C. raisins, 1/2 C. pineapple pieces
Directions:
Preparations:Butter and flour two nine-inch cake rounds
Melt butter
In the mixer bowl, combine butter, sugar, vanilla, molasses, lemon juice and salt
In a separate bowl combine flour, baking powder, baking soda and spices
Grate carrot
Directions:
Preheat oven to 375F
Mix butter, sugar, vanilla, molasses, lemon juice and salt
When cool enough eggs won't cook, add eggs
Sift in dry ingredients
Add carrot and optional ingredients
Pour into prepared cake rounds
Bake 40 minutes or until done
