"Parmesan Crusted Pork Tenderloin With A Creamy Mushroom Sauce Over Penne, Mozzarella and Basil to garnish."
Ingredients:
- 2 cups of bread crumbs
- 1 cup of parmesan cheese, grated
- 2 large egg
- 3 tablespoons EVOO
- 2 pounds of thinly sliced pork tenderloin
- 1/2 cups of garlic, minced
- 1 cups heavy cream
- 2 cups chicken stock
- 4 cups of uncooked penne pasta
- Mozzarella and Basil to garnish
Directions:
PASTA
In a large pot, bring water to a boil and cook your pasta.
MEAT
In a small mixing bowl combine bread crumbs and Parmesan cheese, set aside. In a separate container beat eggs and EVOO. Brush pork with egg mix and cover with bread crumb mixture cook on skillet over high heat apox 4 minutes a side for each piece.
SAUCE
While your pork is cooking, Mince your garlic and brown in a medium size sauce pan. Add cream and chicken stock. Heat to boil, then reduce to a simmer.
Plate penne, sauce, pork. Mozzarella and Basil to garnish.
