"Vegan salad"

Servings: One
  • One cucumber
  • One carrot
  • Two plums
  • Half of lemon or lime
  • One stalk scallion
  • Sprig or two of Cilantro or culantro
  • Salt to taste
  • One teaspoon oil

One medium size cucumber slice or diced, your choice, two plums of your choice, sliced or diced, one medium size carrot, peeled and cut on a slant, cilantro or culantro chopped fine, lemon squeezed, salt to taste, pepper or no pepper your choice. Tsp oil of your choice, mix well and enjoy. If you increase the size of your cucumber ,the increase your carrot, and add two extra plums. And maybe your lemons and herbs.Enjoy
