Fried Beef Tripe

"A fried Indonesian alternative, this meat dish is made with spices and soy sauce and cooked to red-hot perfection."

  • 1 ¾ pound beef tripe
  • 4 ¾ cups water
  • 2 garlic cloves, sliced
  • 1 ½ teaspoon coriander
  • 1 ½ teaspoon salt
  • Sweet soy sauce
  • ⅛ peanut or corn oil
  • 3 ⅓ chili powder, optional

1. Wash beef tripe well and then cook it in water for about an hour, or until it softens. Cut the tripe into 2-inch squares, and set it aside.
Grind the garlic, coriander. chili powder (optional), and salt into a paste. Mix the paste with the tripe squares and let it stand for approximately 30-35 minutes.
3. Heat the oil in wok or frying pan, and stir-fry the tripe over medium heat for about 10-15 minutes, or until it is brown and somewhat crisp.
4. Pour a little bit of sweet soy sauce. Sprinkle with the chili powder, if desired.
