
Fried Beef Tripe

Ingredients:
- 1 ¾ pound beef tripe
- 4 ¾ cups water
- 2 garlic cloves, sliced
- 1 ½ teaspoon coriander
- 1 ½ teaspoon salt
- Sweet soy sauce
- ⅛ peanut or corn oil
- 3 ⅓ chili powder, optional
Directions:
1. Wash beef tripe well and then cook it in water for about an hour, or until it softens. Cut the tripe into 2-inch squares, and set it aside.
Grind the garlic, coriander. chili powder (optional), and salt into a paste. Mix the paste with the tripe squares and let it stand for approximately 30-35 minutes.
3. Heat the oil in wok or frying pan, and stir-fry the tripe over medium heat for about 10-15 minutes, or until it is brown and somewhat crisp.
4. Pour a little bit of sweet soy sauce. Sprinkle with the chili powder, if desired.
