Slow Cooker Cheesy BBQ Chicken Bacon Sandwiches

"Ingredients: Excellent low cost meal for the busy person.. Chicken thighs stay moist and juicy, perfect for a summer meal paired with some salt and pepper potato chips and watermelon! :)"

Ingredients:
  • 1/2 bag chicken thighs (mine were frozen)
  • 1 (16-20 oz) bottle of your favorite BBQ sauce (I omitted this and used Fig Balsamic VInegar instead)
  • bacon strips, fully cooked
  • shredded cheddar cheese
  • 6 large onion rolls/buns
Directions:

SO you throw the chicken thighs in the crockpot for the day. I put mine in at 7am and they were falling apart by 3pm. I covered them with water and added some dehydrated onion, garlic salt and chili powder for flavor. When they were done I shredded them with a fork and removed any fat and added a good portion of the Fig balsamic vinagar. I bought it locally at the Queen Creek Olive Mill..Yum! I then layered on the onion rolls the chicken, cheese and 2 strips of bacon and heated it in the microwave until it was melted.. So good! This is the reason I have put on 20 pounds! LOL!
