Iiieeeee!! Thats "Welcome" on steroids available only through Cajun distributors!. The name good Cajun woman does not mean Im Cajun, it means Cajun men haver dubbed me a good woman.They mean that I am exceptionally good at keeping my man happy. They think its a complement but its really not. Thats why women dont say it to each other. To be a "good woman"you have to be an able-bodied cook, and you have to be good at keeping people from getting bored. I believe thats why Cajuns eat anything that cant outrun them. After 30 or so years of chicken/beef/pork/fish/repeat, they are really bored and need a new flavor. Ablebodied cook and a good cook are 2 different things. A good cook makes all the food taste good but thats not enough for our people. You have to know when its appropriate to serve something (like you never serve tuna salad to people who are gonna be outside all day). You have to know what to call it so everyone will eat it (omelette pie instead of quiche for example). You have to know how to create a plate that is pleasing to the eye, to the nose, to the tongue, to the teeth, to the throat, and to the stomach. You have to have several good recipes for every kind of food your man likes and always be looking for new ones so he never gets bored (and theres always the vain hope you will one day find a dish that EVERYONE in the family likes)You have to know how to keep everyone's belly full on a shrimper's pay. Ive been south of the Smith and Wesson line my whole adult life and married to a Cajun shrimper for 17 years. The biography of a good woman is a cookbook. In the first place, the average meal takes 2-4 hrs to cook so we spend a good part of every day cooking. In the second place women cook because thats what makes us women. It goes with child bearing wearing skirts and a screaming voice like nails on a chalkboard. The only Cajun chefs are men because they cook for taste. We women cook because thats what women do. No one is gonna put us on TV for doing what God put us here to do. Its a source of pride that families here rarely eat at resturants for supper, and Sunday dinner in a resturant is only available at National Chains. There just arent enough single men without mamas to make it worth the expense of opening a Mom and Pop joint on a Sunday. And the food at the chains is so bad, it does a great job at making the boys learn how to treat women better so they can get one to keep that'll cook for him. So enjoy my personal list of receipts, most of which have a cute story attached. Not my fault, thats just the way Southern cooking works out
