Dark Chocolate Peanut Butter Bombs

"A dark chocolate cupcake with homemade peanut butter icing."

Servings: 6 BIG CUPCAKES
  • Cupcakes:
  • 1 box of Duncan Heinz dark chocolate fudge cake mix
  • Icing:
  • 1 cup (2sticks) of unsalted butter (room temp)
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3-4 cups powder sugar
  • 4-5 tablespoons heavy cream (half&half)

mix as box directs
1 cream butter with a mixer
2 add vanilla and peanut butter and beat until well mixed.
3 add powder sugar a cup at a time, alternating with heavy cream.
4 whip on medium speed for 2-3 minutes until frosting is light and fluffy
