- 210g canned mexican-style beans, drained
- 145g canned red kidney beans, rinsed, drained, mashed
- 2T tomato paste
- 1T water
- 115g plain corn chips
- 3/4 C coarsely grated cheddar cheese
- 1/2 avocado
- 1/2 red onion, chopped finely
- 1/2 tomato, chopped finely
- 1t lemon juice
- 1/4 C sour cream
- 1T coarsely chopped fresh coriander
1. Preheat oven to moderately hot, 200°C
2. In a large, non stick frying pan, heat the beans, tomato paste ans water. Stir well.Cover and keep warm
3. Place corn chips in an oven proof dish and sprinkle cheese on top
4. Bake in a moderately hot oven for 5 minutes until the cheese has melted
5. Mash avocado in a small bowl and stir in half the onion and tomato with the lemon juice
6. Put the bean mixture on top of the corn chips with the avocado mixture and sour cream. Decorate and serve.
