Cheesy Mashed Potatoes

Servings: 6
Ingredients:
- 8 medium sized potatoes
- 1/2 cup grated cheddar, Monterrey Jack or Pepper Jack cheese
- 1/2 cup milk or half and half
- 3 tbsp. butter
- salt and pepper, to taste
Directions:
1. Wash potatoes and peel. Cover with water in a large saucepan and bring to a boil.
2. Simmer until potatoes can be easily pierced by a fork (about 20 minutes).
3. Drain potatoes and return to pan. Shake over heat until dry. Transfer potatoes to a bowl.
4. In the same pan, heat milk and butter until steaming hot. Mash potatoes with cheese. Season to taste with salt and pepper.
